Switzerland’s GaultMillau Guide for 2027

GaultMillau Schweiz has just released its 2027 guide for Switzerland (in German), which features a total of 870 restaurants throughout the country—10 fewer restaurants than last year. This annual guide reviews restaurants and awards them up to a maximum of 20 points. For access to the online directory in French, you can visit the website for GaultMillau Suisse.

Along with the release of its guidebook, GaultMillau also announced its annual award winners for the fields of gastronomy and hospitality, such as Chef of the Year. Here’s a quick list of the 2027 winners.

2027 GaultMillau Winners

Chef of the Year: Dominik Hartmann of Magdalena in Rickenbach (SZ) – 18 pts. This marks the first time in GaultMillau’s history that a chef based at a vegetarian restaurant has received this distinction.

  • Cyrill Baumann, Ufer7 in Basel (BS) – 14 pts

  • Alessia Saglini and Baldo Lopez, Ristorante 3VIE in Motto (TI) – 14 pts

Green Chef of the Year – An award that recognizes a chef working in Switzerland for their sustainable practices: Stefan Beer, Radius at the Victoria-Jungfrau Grand Hotel & Spa in Interlaken (BE) – 17 pts

Pastry Chef of the Year: Stefan Gerber of Badrutt’s Palace in St. Mortiz (GR)

Host of the Year: Sarah Benahmed of La Table du Lausanne Palace in Lausanne (VD) – 18 pts

Sommelier of the Year: Giuseppe Lo Vasco of Mammertsberg in Freidorf (TG) – 18 pts

The 2027 Gault & Millau Guide at a glance:

Overall, 84 restaurants appear for the first time in the 2027 guide. For example, Sebastian Walczak of Brasserie 1809 at the Capra hotel in Saas-Fee (VS) entered the guide for the first time with 13 points.

In addition, 98 restaurants received an additional point in this year’s guide, while 31 restaurants saw their points decrease.

Seven restaurants maintained 19 out of 20 points, the highest rating achieved in Switzerland:

The guide also contains a list of Switzerland’s 150 best wineries and 100 “best hotels for Swiss gourmets.”
