Anne-Sophie Pic’s Lunch at the Beau-Rivage Palace

With more than 15 years at the Hotel Beau-Rivage Palace in Lausanne, Anne-Sophie Pic decided the time had come for a renovation of her signature Swiss restaurant, PIC. French architect and interior designer Tristan Auer led this effort, resulting in a fresh new look for this 2-Michelin starred destination.

For the opening of the renovated terrace and garden seating for the summer season, I was invited to experience her new weekday lunchtime offering: four or five elegant courses in only 90 minutes.

In the menu booklet we received at the table, Anne-Sophie Pic describes the cuisine at her only restaurant in Switzerland as “a sensitive and floral cuisine that celebrates the lake and the scents of Alpine valleys.”

At the inaugural lunch of the new garden space at PIC, here is the 4-course menu that we enjoyed:

  • AMUSE-BOUCHE: A Swiss-inspired bricelet sandwich filled with Gruyère caramel from Duttweiler Fromage with two other flavorful little bites.
  • GREEN PEAS: wild picked linden, tonka bean, brousse cheese and gyokuro tea.
  • LAMB FROM AN APPENZELL MEADOW: Infused with Mont Gibloux cheese, Swiss chard cushion and wild thyme brousse cheese.
  • VANDA CHERRY: Perfumed with wild marjoram, nepeta cream and Sambirano Grand Cru chocolate.

Chef Jordan Theurillat has worked at Maison Pic for the last 10 years. He’s joined at the Beau-Rivage Palace by pastry chef Baptiste Tisserand. Both were on hand during our special lunch to introduce themselves and answer questions about the menu.

The lunchtime menu at PIC changes every two weeks. It’s available on weekdays from Tuesday to Friday, from 12:00 to 13:30. These menus start at CHF 160, with non-alcoholic pairings for an additional CHF 40. The restaurant also offers complimentary valet parking.

Upcoming events:

  • HELVETIC WEEK: From August 26 to 30, 2025, PIC at the Beau-Rivage Palace will offer a special menu featuring ingredients from local Swiss producers.
  • HELVETIC EVENING: A selection of wines from different Swiss cantons in one night with a 7-course menu. August 28th at 18:30.
  • PIC Market: Helvetic Week culminates with a special market. Anne-Sophie Pic invites her favorite local producers to the garden of the hotel. Scheduled for Friday, August 29th from 10:30 to 13:30. Free entry. I attended the inaugural edition of this market in 2016, and I highly recommend this event.
